Toasted pan au levain with mushrooms

Impress your friends and learn to cook this fantastic summer dish, toasted pan au levain with sauteed mushrooms.
Serves 2
Ingredients
Mushrooms
Butter
1 Shallot
1 clove of
garlic
Chicken
stock
Salt
Pepper
Olive Oil
Crusty
bread
Pecarino
cheese

Method
- Break
mushrooms and chop them, not too small.
- Add a
couple of knobs of butter to a heated pan.
- Chop a
shallot and a clove of garlic, and add to the pan.
- Add the
chopped mushrooms.
- Add a pinch
of salt and pepper.
- Add some
chicken stock, approx 300 ml.
- Add another
knob of butter.
- Leave to
reduce.
- In another
heated pan, add some olive oil.
- Slice some
crusty bread.
- Fry 1 side
of the bread for about 15 seconds.
- Put the
reduced mushroom mix onto the bread.
- Garnish
with a few shavings from a pecarino cheese.
