A new research has found that white bread, just like handmade sourdoughs, does not necessarily make you fat. Although eating the mass-produced white loaves has always been deemed unhealthy, researchers said that there’s probably no reason to give it up.
In a study participated by 40 volunteers, Israeli researchers found that neither handmade sourdough nor white bread put on more weight than another. However, sugar levels of all participants, half of whom ate white bread and the other half consumed handmade sourdough, spiked.
Dr Evan Elinav, of the Weizmann Institute of Science in Israel, said: 'There is this notion that some bread is better than others. Industrial bread is seen as bad and home-made sourdough is seen as good.
'We found that just like any other food, our responses to bread are completely personal.
'This personalised effect is there for every single food. There is not one single good or bad or super food.'
Due to the notion that is it unhealthy, the sales of white bread have dropped by as much as 75per cent in the last 40 years. However, there has been an increased demand for artisan loaves.
